Food Grade/Bakery Xylanase (Hemi-Cellulase) SBE-02X is produced by submerged fermentation of Trichoderma reesei followed by purification, formulation and drying. The product is used in baking to improve dough handling properties and sensory properties as well as product volume of baked products by modifying the hemicellulose components in flour.

Mechanism and Product Standard

Hemicellulose comprises a group of heterogenous polysaccharides made up of hexose, pentose and their derivatives. The product is able to degrade hemicellulose polymers present in flour to produce oligomers and their building blocks, which contributes to improved dough handling properties, yeast fermentation, product volume, sensory properties and crumb texture.

Dosage & Recommendation

This product is used for flour improvement to produce specialty flour, being more suitable for bread flour improvement. It can also be used in end products to enhance the quality of baked and steamed goods.
Recommended Dosage
1-3 g per 100 kg of flour (i.e., 10-30 ppm). The actual dosage depends on flour quality and should be determined by final baking or steaming tests. Excessive addition may reduce dough water retention and cause stickiness.
Precautions
  • When mixing the product with flour or starch, pre-dilute it stepwise at a ratio of 1:10.
  • After each opening of the bag or bucket, if not used completely, tighten the bag opening or bucket lid to prevent inactivation of the active components.
