A lactic acid-forming bacterial species. Gram-positive rod (0.9 by 3.0 to 5.0 μm in size), catalase positive, spore-forming, motile, and a facultative anaerobe. Metabolism prefers mesophilic temperature about 40ºC, range of temperature is 30-55ºC; and it grows in the pH range of 5.5 to 7.0. The spore formed Bacillus spp is more acid tolerant than pathogenic and spoilage microorganisms, showing good resistance to high temperature, acidity, and bile.
Spores of B. coagulans are likely to survive at gastric pH and reach the intestine, where sporulation can occur. The animal or human gastric humidity can help the bacteria to transform from spore form to active state of being, and then produce peptidoglycan to coordinate this inactive/active metabolism.
